Lemon Drizzle Cake

So what do you think of my magazine cover?
Oh well...we all can dream, but then it's a reality for some lucky people.
Take for instance last night I watched the Australian Masterchef programme and the contestant who won the best dish of the day gets to have their dish photographed for the front cover of a future copy of the Masterchef magazine.
How cool is that?
I won't mention who won last night, just in case anyone hasn't managed to watch it yet...but plans to later....
.....So today I thought I'd have my own little competition and photograph my own magazine cover....and guess what...surprise, surprise I won!
....you can do that sort of thing when you have your own blog ;D
I thought because it's still winter here (with a very nippy wind today ~ I might add) it would be good to make something with a splash of sunshine colour.


I chose a Lemon Drizzle Cake because not only does it look and taste good, (well wickedly yummy actually) lemons are in season here at the moment. There are masses everywhere you look.... I've never seen so many gardens with lemon trees and even our very own little tree has about a dozen little darlings all ready for the picking.
They're adding they're own splash of bright yellow to the garden.





Lemon Drizzle Cake ~ serves 10 (oh my...my boys are going to be happy) 

Ingredients:
150g butter, softened
1 teaspoon vanilla extract
2 teaspoons finely grated lemon rind
1 cup (220g) caster sugar
3 eggs
2 cups (240g) ground almonds (almond meal)
¾ cup (110g) self-raising flour
½ cup (110g) caster sugar ~ extra
cup (80ml) lemon juice

Lemon glaze1 cup (160g) icing sugar
1 ½ tablespoons lemon juice, approximately

Method:
Preheat the oven to 160°C (140°C fan-forced)
Grease a deep 20cm square cake pan/tin, line with baking paper.
Beat the softened butter, vanilla extract, lemon rind and sugar in a small bowl with an electric mixer until light and fluffy. 
Beat the eggs, one at a time, until well combined. 
Transfer mixture to a large bowl.
Stir in the ground almonds and sifted flour.
Spread the mixture into the prepared baking pan/tin,
Smooth the top.
Bake for 1 hour or until a skewer inserted into the centre comes out clean.
Meanwhile, combine the extra sugar and juice in a small saucepan,
Stir over a medium heat until the sugar is dissolved.
Remove from the heat.
Prick the surface of the cake all over with a skewer.
Pour the hot syrup over the hot cake.
Allow the cake to cool in the pan.

Lemon Glaze
Combine sifted icing sugar and lemon juice in a small bowl until smooth.
Transfer the cake to a serving plate.
Spoon over the lemon glaze.

Suitable to freeze without the lemon glaze (thank goodness as this recipe serves 10!!!)
Syrup suitable to microwave.

I was inspired to bake this cake when flicking through the Australian Woman's weekly magazine ~ I just love that magazine and even before I lived here in Melbourne, I used to buy their recipe books.

      12,000 miles isn't that far really...not for a slice of this cake according to my hubby!
      It really is an easy cake to bake...which makes it a winner in my book.
      The farm shop sounds great. I love to visit local farm shops when we're home.

    1. I have to confess that I've had three (smallish) pieces of this cake already and I can normally resist my baking.
      It definitely has drool appeal May...hehe ;D

  3. Oh Neesie, what a marvellous post!! Anyone who can make such delicious lemon drizzle cake as that, and from their Own Lemons no less, has GOT to win first prize in my book!!!!! I'm afraid you've got my mouth watering. Lemon drizzle cake is my absolute favourite, and I love all cake! Brilliant photos all round, too. Just juicy delicious. (At this rate Shoshi will never get her waistline back...)

    Thank you for your really lovely comment on my blog about my Fiddler card. They were such a special couple, and he is going to be sadly missed by so many people, as evidenced by the huge turnout at his funeral. I am quite glad it's taken me this long to get the card done, because I always think the period after the funeral is the hardest for the ones left behind, when the cards and letters and visits drop off, and everyone expects you to be getting over it, and I wrote inside that she is not forgotten, and that she is in our thoughts and prayers. Anything to do with Fiddler on the Roof is indelibly linked in my mind with her hubby for all time! Unforgettable... I wish you could have seen him singing "If I were a rich man" - every bit as good as Topol in the film - better actually because we knew and loved him!!

    1. Getting a waistline back...hmm...now there's a concept I'd forgotten about ;D
      I normally just like to bake but don't have a problem with resisting the cake at the end...strange I know but there you go...but I have to admit I've had three (YES THREE) pieces of this one already.
      As you say to be able to make it from our own lemons makes it all the more special. My hubby commented last night that this was the best cake I've made! Let me tell you I've made quite a few so that was a huge tick in this one's favour, but then he adores anything lemony.

  6. Loved your post, Neesie ... it did, indeed, bring a breath of summer this way. Lemon trees always take me back to Italy and Amalfi ... everywhere you turned there was lemon trees laden with fruit and right now I could do with a few to help ease the cold I've got :)

    Your magazine cover is gorgeous ... it epitomises beautiful living!

    I think the EM would love the sausage recipe too - it's his kind of comfort food ... rather like lemon drizzle cake would be mine if it didn't have so much sugar in it :))

    1. I'm so happy I brought a little summer your way Elizabeth. I heard a ridiculous piece of news yesterday that said that somewhere in the UK (not sure where now) had only had 1½ hours of sunlight in the whole month (A WHOLE MONTH!!!)
      I think you should make the lemon dizzle cake for medicinal purposes. I'm sure it would have your cold feel so much better ;D

    Beautifully sunny here but that stiff breeze is still whipping about. Great to get the washing dry though...how about down at your end?

    Hmm...thinking about it though if we have lemons all the year round my hubby will definitely be 'ALL ROUND'too...he'll want lemon tarts and drizzle cakes constantly.
